Ingredients: 10 g English mustard powder; 2 tbsps dried oregano; 200 g cauliflower or Romanesco cauliflower, leaves and all, cut into pea-sized chunks; 4 red chillies, halved, deseeded and finely chopped; 50 g salt; 4 bay leaves; 15 g yellow mustard seeds; 150 g caster sugar; 2 mangoes, peeled, stoned and roughly chopped; 10 g ground turmeric; 1 tsp coriander seeds; 200 g carrots, peeled and grated; 3 garlic cloves, crushed; 100 g fennel, cut into pea-sized chunks; 600 ml white wine vinegar; 1 tsp cumin seeds; 200 g broccoli, cut into pea-sized chunks; 200 g shallots, peeled and finely chopped; 2 apples, grated; 20 g cornflour; 200 g fine green beans, chopped into short lengths
