There are decent brands of sauerkraut in the shops, but it’s such fun to do a bit of fermenting yourself.

Ingredients

  • 1 white cabbage, very finely sliced
  • 1 tbsp salt
  • 100 ml

Method

This takes 10 days. If you have a dishwasher, place your Kilner jar and lid in the machine and run on the hottest cycle. You can also boil a large pan of water and submerge the jar and the lid for a full minute. Do not dry them, place them on a wire rack upside down to cool on their own.
