Believe it or not, you really don’t need a recipe for salad dressing. You can create endless varieties, with ingredients you probably already have on hand, if you stick to the ratios listed in this simple blueprint. And although you might never have considered oil-free dressing as a possibility, dressings that use alternative ingredients will actually bind better than traditional versions because straight oil doesn’t mix well with other liquids (such as vinegar and citrus juice).
