This is a general technique, apogetic and best-known in its application to the spiny lobster, but used by the Menorcans just as readily for the humbler cigala or members of the mérou (grouper) family. Begin by ensuring that you have some good fish stock made from fish heads, e.g. that of a mérou, and other wholesome debris.
