The little town of Agde, close to the sea and about halfway between Narbonne and Montpellier, is to be congratulated on the formation of such a charming adjective from its name. Like the people of Sète, not far away, the Agathois have their own traditional recipes. This one, for cuttlefish, may also be applied to squid.
