Buy a fine daurade of 1½ kg (3¼ lb). Clean, wash and pat dry. You will also need:
Pour most of the olive oil into an oven dish which will accommodate the fish. Add half the chopped parsley, half the potato and half the grated cheese. Then the fish. Then the other half of the parsley, potato and cheese. Finally the small remaining amount of olive oil. Season. Cook in a hot oven (430°F, 220°C, gas 7) for 25 minutes or so.
