  • About

A clay mortar and wooden pestle are ideal for making a smooth sauce. Otherwise, use a blender or food processor.

Ingredients

  • 24 blanched almonds, toasted
  • 5 garlic cloves, cut up
  • 2 tablespoons chopped fresh flat-leaf pars

Method

In a mortar, blender, or mini food processor, grind the almonds and garlic to a coarse paste. Add the parsley, toast, cocoa, brandy, and 2 tablespoons of the degreased sauce.
