Though this version of smen doesn't have the depth of flavor and aroma of the previous two recipes, it is easier to make and far more economical.

Ingredients

  • 8 ounces (2 sticks) organic unsalted butter, cut into 12 chunks
  • 2 ounces coars

Method

  1. Knead the butter with the salt until well combined. Divide into 8 flat patties. Stack in an earthenware or dark glass container, cover, and store in a cupboard for 2 to 3 weeks to develop flavor.
