The bone marrow in this dish is turned into a deep-fried crispy fritter that delivers a real little treat and gives a fantastically rich flavour. Everybody seems to have their own interpretation of bubble and squeak, so I hope you enjoy mine! As with all other recipes, you can use up any additional leftover greens.


  • 4 fillet steaks
  • salt & pepper
  • 6 sprigs fresh thyme


Pre-heat the oven to 180°C/gas mark 4.

To make the bubble and squeak cake, bake the potatoes in the oven at 180°C/gas mark 4 for about 1 hour
