  • 4 large boned pork chops
  • 2 tbsp olive oil
  • ¾ pineapple, peeled, cored and finely sl

Method

  1. To make the marinade, put all the ingredients into a food processor and blend to a smooth paste. Pour the mixture into a large mixing bowl, add the pork chops and mix until the meat is well coated. Cover and leave to marinate for 1 hour, or overnight in the refrigerator if time allows.
