  • 8 large flour tortillas
  • 300 g/10½ oz mozzarella, thinly sliced

Method

  1. To make the green mole sauce, put all the ingredients into a food processor, season with a really good pinch of salt and pepper and blend on a high setting for about 5 minutes, or until really smooth.
