The strong flavours of this Mexican-inspired dish come from the delicious aromas and flavours of the cinnamon and cloves. These permeate the rice as it cooks in the sauce giving it depth. The garlic and tomatoes provide balance, and the coriander and fresh lime juice, added just before serving, lift the rich, spice flavours that combine superbly with juicy king prawns.
