A mansaf is a Jordanian dish traditionally made with lamb and served on a huge platter. The lamb is cooked with a thick yogurt sauce and served on a bed of rice, with nuts and herbs scattered over the top. It’s a dish meant for sharing, as is this fast interpretation.
My version is made with chicken thighs instead of lamb and is seriously spiced up with saffron, cinnamon, cardamom and a heavy grating of nutmeg. Instead of making a traditional yogurt sauce, I have included a s
