  • 1 pork shoulder (raw or already packed and salted)
  • 2 garlic cloves
  • 1–2 bay leaves

Method

Fill a large, deep pot with water. Tie the pork shoulder to a stick or ladle that can rest on the rim of the pot, so that the shoulder can hang in the water and cook evenly without touching the sides of the pot.

Add all the other ingredients, bring a simmer and leave to cook for 4 or 5 hours depending on the size of the shoulder. Remove from the heat and place the shoulder on a cutting
