  • 500 g flank steak
  • salt
  • sage leaves
  • 100 g thinl

Method

Slice the beef and salt the slices. Lay a sage leaf in the centre of each one, then a slice of pancetta, then roll them up, with the pancetta on the inside, and fasten closed with a toothpick.

Slice the onion. Melt the butter in a shallow frying pan and sauté the onion until soft. Add the rolls, brown briefly then add the wine and continue cooking over low heat until the cooking liquid
