Like Lionel Richie, garlic confit is soft, mellow, and easy like Sunday morning. If you make a large batch to keep on hand, you’ll happen into plenty of uses for it.
Salt and place garlic cloves in enough oil to mostly cover. Simmer over low heat.
Once the cloves are soft and squishy, cool them and transfer to the fridge.
