Mozzarella mousse is pretty stable, like chocolate mousse, because it has a high fat and protein content. It’s a decent way to approximate the luxury of burrata without the expense. Whereas good burrata can run upwards of $15 a pound at a specialty cheesemonger, the fresh mozzarella available at most supermarkets costs $3 to $6 a pound.
