This is my pared-down take on a Caesar salad. The creamy dressing is packed with fresh herbs for an intense springy flavor, but I also like the way the resulting vibrant green color looks against the pale greens and whites of the romaine hearts.

Ingredients

For the Dressing

  • 1/4 cup (60 milliliters) buttermilk
  • 2 tablespoons sour cre

Method

  1. Make the dressing: In a blender, combine all the ingredients except the oil and blend on high speed until completely mixed. Add the oil and blend on high speed until completely combined. (The dressing can be stored, covered, in the refrigerator for several days. Stir before using.)
  2. Make the salad: Remove any brown or wilted leaves from the romaine. Carefully trim
