Dolmades are a popular Greek mezze, usually a mixture of rice, ground meat, and fresh herbs wrapped tightly in brined grape leaves and stored in oil. This is basically a deconstructed version; you have all the bold, delicious flavors of the dolmada without the time-consuming task of rolling grape-leaf parcels.

Ingredients

  • 3 tablespoons (45 milliliters) extra-virgin olive oil
  • 1 small yellow onion, finely minced

Method

  1. In a large pan, heat the oil over medium-high heat for 30 seconds. Add the onion and garlic and cook, stirring, until the onion is soft and translucent but not browned, about 3 minutes.
  2. Add the beef, salt, and a generous amount of pepper. Cook, stirring, until the meat is completely cooked through, about 3 minutes.
  3. Add the rice and stir well to combin
