The Crab Club Sandwich


  • 1 generous portion white crab meat
  • 1 teaspoon Jalapeño Tabasco (green Tabasco)
  • 1 tablespoon crème fraiche or mayonnaise
  • salted butter, softened
  • freshly ground pepper
  • 1 tablespoon fresh coriander or chervil, finely chopped
  • 3 slices of bread, lightly toasted if you wish
  • ½ ripe avocado, peeled and thinly sliced
  • 1 ripe tomato, seeded and thinly sliced seasoning
  • iceberg or other lettuce, shredded


Mix the crab, Tabasco and ème fraiche or mayonnaise. Mix the butter, sufficient to spread on 3 slices of bread, with the pepper and herbs. Butter the bread, then build up the first layer of avocado and tomato; season lightly. Place the middle slice of bread on top, and spread the crab on it. Top with shredded lettuce, then the final slice of bread. Spear with cocktail sticks in strategic positions, then cut the sandwich in quarters, or otherwise as appropriate.
