Of all the winter vegetables, broccoli boiled until just tender most frequently takes center stage in our winter meals. It looks great, tastes terrific, and happens to be healthy to boot.

Boiling is the simplest way to cook broccoli and the best way to keep its color a vivid green.

Ingredients

  • Salt
  • 1 bunch broccoli
  • freshly ground black pepper
  • Lemon wedges

Method

  1. Bring a medium-size pot of salted water to a boil. Cut 3 to 4 inches off the thick stems and save for another day. Separate the remaining broccoli into pieces of about equal size.
  2. Add the broccoli to the boiling water and cook uncovered until just cooked through, 3 to 4 minutes.
  3. Drain the broccoli thoroughly in a colander. Serve hot dusted with pepper an
