  • 1 pound snow peas

Method

  1. Bring a medium-size saucepan of salted water to a boil over medium heat. As the water comes to a boil, snap off the stem ends of the snow peas and pull off the strings; discard any yellow or bruised ones.
  2. Add the snow peas. Bring the water back to a boil and drain the snow peas immediately; this will keep them firm and bright.
