Braised lentils can be used in so many dishes – fish or meat – and is perfect as an accompaniment to a main course or as a vegetable dish in its own right.

Ingredients

  • 50 g (2 oz) unsalted butter
  • 1 carrot, finely diced

Method

Pre-heat the oven to 200°C/400°F/gas 6.

Melt the butter in a flameproof casserole and fry the finely diced vegetables for a few minutes. Add the lentils and bacon, if using, and fry for a further minute. Add about 600
