Using crème fraîche in any ice-cream really lifts the taste of other flavours. But using it as a main flavouring gives a basic vanilla ice-cream a really good bite. For every 300 ml (10 fl oz) of Vanilla Ice-cream you will need to add at least 150 ml (5 fl oz) of crème fraîche while the mixture is still liquid. This will give quite a strong taste. After that it’s really up to you. If you want it stronger, simply start to add a spoonful at a time until you have the flavour you want. To make the flavour a little sharper, then also add 1 tablespoon of natural yoghurt to the mix.
The other alternative is to mix a tin of custard with 150 ml (5 fl oz) of crème fraîche and you have instant ice-cream mix.
