This ice-cream can take on loads of combinations. It can be coated in chocolate, almost like making your own ‘taste of paradise’, mixed with chopped pineapple, made into a Pina Colada pudding, or even served with Pineapple Fritters and Chocolate Sauce. If you don’t have a fresh coconut, just replace it with 50 g (2 oz) of desiccated coconut.
