Fruit purées, or coulis, are used for many things, particularly bases for sorbets, as sweet sauces and as flavourings in mousses. The French term coulis literally means sieved and this method is used for soft fruits such as strawberries, raspberries and blackcurrants. Because of the sharpness in the flavour, the fruits may need to be mixed with icing sugar. These quantities are good guidelines; you can vary them to suit the tartness of the fruit.
