Lemon curd eats very well just on toast or teacakes. I like to use it for Lemon Curd Ice-cream or as a sauce for steamed sponges.

This recipe is very rich with a high butter content. If you prefer, you can cut the butter down to 100 g (4 oz) and also cut down by 1 egg yolk. The lemon curd will still work without being over-rich and will have a slight
