At Morito, we use Spanish red prawns, as the colour, flavour and texture are absolutely spectacular. They have a vibrant red shell even when raw, a sweet flavour and a soft, smooth texture that melts in the mouth. However, red prawns are not the easiest to come by, so if you can’t get hold of them, ask your fishmonger for another type of raw prawn. We serve the prawns with Avocado Mojo, Mojo Verde or Alioli.
