We always look forward to the asparagus season, which starts at the end of April and lasts through to June. When we go to Spain in the spring we keep our eyes peeled for wild asparagus that grow among the wild flowers along the roadsides. The Navarra region in northern Spain is famous for asparagus, particularly the white variety. Piquillo peppers, also from the same region, when made into a sauce, ideally complement the asparagus.
