Baking fish in salt is one of the all-time classic ways of cooking fish throughout the Mediterranean. The Spanish are very fond of baking bream in salt, but any fish can be successfully baked in this way – cod, sea bass, turbot or salmon. This is traditionally served with Alioli.

Ingredients

  • 4 portion-sized whole bream (red, golden or black), scaled and gutted and trimmed of fins and tail

Preheat the oven to 220°C/425°F/Gas 7.

Stuff the parsley stalks, fennel or fennel seeds and lemon inside the cavity of each fish.
