Name: Chocolate Beetroot Cake
Yield: Serves 8–10
Ingredients: melted chocolate and/or Maltesers for garnish; 1 vanilla pod, halved lengthwise and pulp scraped out; 150 g good quality dark chocolate chips; 100 g butter, diced; 170 ml hot water; 120 g cooked beetroot, grated; ⅔ teaspoon bicarbonate of soda; 110 g plain flour; ⅔ teaspoon baking powder; 200 g caster sugar; 2 large eggs; 1½ teaspoons vanilla extract; 260 g icing sugar; 60 g butter, melted; 35 g cocoa powder; 125 g self-raising flour; 170 g cream cheese

This was my mum’s recipe which I stole and then added beetroot to. Us Kiwis go mad for beetroot! I came up with this 15 years ago when my old head chef asked me to make a cake for her to take to a radio interview about cheffing in London. I thought, ‘This should be fun, let’s Kiwi this up…’ They were speechless that someone would put beetroot in a cake and that it tasted good!
