Pavlova is a dessert that gets taken very seriously back home. It’s often the conversation at barbecues and parties: ‘How do you make yours? How do you get it marshmallowy in the middle and crispy on the top?’ Pavlova rivalry is rife! But mine kept flopping so I kept working at it.
