Method

Don’t be alarmed — mojo has nothing to do with voodoo or Austin Powers. Mojo simply means ‘wet’ and that is the unifying theme of the sauces from the Canary Islands. Very fluid and very lively, they may be made from mint, coriander, sweet peppers, nuts, green capsicum or any combination of these ingredients. They are always sharp with vinegar or citrus and can bring to life a dish of fish or cut through the richness of a plate of meat. Mojo sauces are so prolific that whole cookbooks have been devoted to them. In this book we only have space for my two favourites. The following Mojo sauces will keep in the refrigerator for 2–3 days.
