Marrow and courgette/zucchini plants thrive in the warmth of the Indian sun and they are often found growing wild on rubbish heaps, so their flowers are not the rare treats they are in the West – they are common and fair game. They are also delicious. It has become almost de rigueur for chefs in the West to stuff them. We don’t in India – we see the dense, spiced batter as a kind of outside stuffing. However this does not mean that you should not feel free to play around with stuffings too,
