Everyone needs a good tandoori recipe up their sleeves. A tandoor is the traditional clay oven used for cooking marinated meats – the cook is swift and fierce and the meat charred and beautifully juicy, so the spices need to be big to fight through the flavour of the fire. These chops are superb under the grill/broiler, in the oven or, best of all, on the barbecue.
