It is very common in India to eat melon with a little bit of salt on the side to bring out the sweetness and make it all the more refreshing. The lovely salty tang of feta cheese does the same in this dish. It may sound like an unlikely combination, but it is very special, and I urge you to give it a try.

Ingredients

  • ¼ watermelon (approx. 1 kg/2 lb 4 oz), peel

Method

  1. Put both types of melon and the feta cheese in a large bowl and toss together to combine, then tip out onto a serving platter. Drizzle the lime juice over the melon and cheese, followed by the honey. Using a sieve/strainer, dust the salad with the ground cumin and chaat masala or salt, then scatter over the chopped fresh mint. Serve.
