Sandia (watermelon) lends itself to so many refreshing, easy recipes during the hot months of summer and this is one of them. All you have to do is prepare Agua de Sandia (Watermelon Cooler) and you have the base for this grown-up cocktail. It’s the drink that keeps on giving. Serve the Agua de Sandia to the kids during the day, then add a splash of coconut rum and club soda and serve it to adults at night. Salud!

Ingredients

  • 3 ounces coconut rum
  • 3 ounces Agua de Sandia
  • 1 ounce club soda, pre-chilled
  • Ice
  • Mint leaves

Method

Pour the rum, agua de sandia, and club soda into a cocktail shaker. Toss in a handful of ice cubes and shake vigorously. Strain into a chilled martini glass and garnish with mint.
