Silkmeler are dishes prepared with small amounts of cubed or minced meat as in the recipe below. “Silkme” means shaken, and the pan is shaken from time to time during cooking so that nothing sticks. In this dish crushed cloves of garlic are sometimes added to the pan with the meat and potatoes.
Simmer the meat in the water for about 1 hour until tender, then drain. Heat the fat or oil and fry the potatoes for 5 minutes until golden. Transfer them to a colander, fry the meat in the fat used for the potatoes for 2 minutes and drain.
