This dish of apples and meat patties from southeastern Anatolia can also be prepared with pekmez – grape syrup (p. 173) – instead of sugar. Dizme means “lined up” and refers to the way the apples and köfte are arranged in the pan.

Method

Core the apples and slice in rings 1.25 cm/1/2 inch thick. If the apples are large, cut them in half and then slice them.

Knead the mince well with the cloves and salt and make köfte the same size
