Prepare the filling.
Cut each yufka into 4. Place some filling along the long side of each piece of yufka. Fold the edge over the filling, tuck in the ends and roll like a cigarette. Brush some water on the join to ensure it sticks and fry in very hot oil for 5 minutes. Drain on absorbent paper, then serve hot.
