This recipe, contributed by a Turkish lady, is a modern one supposedly devised to save time, which it does not. It is nevertheless a delightful dish.
Slice the vegetables lengthwise into very thin slices. Sprinkle the slices with salt and leave them in a colander to drain for at least ½ hour. Wash in cold water and pat dry. Fry in deep, hot oil until soft and a little bronzed. Remove and drain on absorbent paper.
