Pancakes made from gram/chick pea flour are so light, they seem like crêpes. The flour has a subtle flavour and, with a filling or a sauce, one of these pancakes is a meal in itself. Eat them with some of the curried vegetable dishes, or with a curry sauce and jajiki, or omit the spices and eat them with fruit for a special breakfast.

Ingredients

  • 100 g/4 oz/1 cupgram /chick pea flour
  • ½ teaspoon salt
  • ½ teaspoon turmeric
  • pinch of cayenne pepper
  • 350 ml/12 fl oz/ cups iced water
  • corn oil for frying

    Method

    Mix the flour, salt and spices together. Gradually add the iced water until you get a smooth batter. Heat a little oil in a pan and tilt it to cover the inside. Add a quarter of the batter and cook until the edges are brown and crisp, and the top has dried out. Slide it on to a plate and keep warm. Make the other three crêpes, oiling the pan each time.
