These American-style pancakes have a slight crunch to them and are splendid for brunch or the more ambitious weekend breakfast. They are excellent with summer soft fruits, and go well with butter, honey, maple syrup and sour cream.

Ingredients

  • 4 tablespoons butter
  • 100 g/4 oz/2

Method

Melt the butter in a frying pan, mix in the breadcrumbs and stir for a moment. Mix the egg and flour together, then add the sour cream, milk and baking powder. Fold in the breadcrumbs and season. Oil or butter a hot frying pan or skillet and fry spoonfuls of the mixture, turning them over when the surface of each is marked with bubbles.
