The hills of mainland Southeast Asia are still the home of numerous ethnic groups and tribes whose favourite food and principal food crop is glutinous rice. (Some of them are opium farmers too, but that’s another story.) In northern Thailand, around Chiang Rai and Chiang Mai, I came across people cooking this rice in tubes of young green bamboo and selling it at roadside stalls; it is delicious, and a very healthy and satisfying snack when travelling. Elsewhere in Asia ‘sticky rice’ is cook
