Here is a simple recipe for a basic deli mustard that would be perfect for hot dogs or knishes.

  • 85 g (3 oz/½ cup) yellow mustard seeds
  • 2 pinches salt
  • 3 teaspoons dried turmeric
  • 2 tablespoons plain (all-purpose) flour
  • 2 tablespoons acacia honey or sugar
  • 300 ml (10½ fl oz) cider vinegar

Grind the mustard seeds into a fine powder in a coffee or spice grinder (or use bought mustard powder). Combine with the salt, turmeric and flour. Mix the honey and vinegar together. Combine with the dry mixture with a fork until smooth. If it seems a little thin, this is normal since the mustard will thicken on standing. Cover and leave out for a day at room temperature for the flavours to mingle a little. Store in the refrigerator.
