Soft enough to be spooned on a plate, thicker than crème anglaise, and reminiscent of crème caramel without the topping, Luce Galante de Secly’s incredibly creamy dessert is more delicate than, and at least as haunting as, any of those better-known dolci. One of the secrets of its smoothness comes from setting the baking dish on a kitchen towel as it cooks in a bagna maria (water bath). The little bit of insulation protects the crema from the effect
