Fishing for plaice in the Netherlands can be a proceeding at once placid and picturesque, as the drawing at the foot of this recipe shows. It comes from Françoise Berserik’s book (see Bibliography), and is by her father.

Ingredients

  • plaice, kg (3 lb), uncleaned
  • salt
  • parsley

Method

Clean the fish and put it in a suitable pan with enough salted water barely to cover it. Bring the water slowly to the boil and poach the fish in it for 15 minutes, until it is ready. Then remove it to a serving platter and garnish it with parsley curls and thin lemon slices, using only half of the lemon.
