Mount Pearl Fish Loaf

Mount Pearl is in Newfoundland and it is in the cook book of the United Church Women of the First United Church of that good place that this recipe is to be found. It looks and is easy to make, and comes off well with any white fish. We have made it with conger eel.

Ingredients

  • cooked fish (see above), 2 cups
  • melted butter, 1 tbs
  • flour

Method

Add the flour to the melted butter and blend well. Then add the hot milk, little by little, stirring. Season and add the remaining ingredients. Mix well together and pour into a greased oblong baking tin, deep enough to give the mixture the form of a loaf. Place this in a bain-marie of simmering water and cook it thus in a moderate oven (355°F, 180°C, gas 4) for 1 hour. The loaf may be served h
