My recipe for this is from Mrs Appleyard’s Kitchen (Boston, 1942).

Ingredients

  • salt cod, ¾ kg ( lb)
  • potatoes, 6
  • onions

Method

‘Soak the fish in cold water overnight. Change the water three times. Before you start to cook the vegetables, put the fish in a large frying-pan, cover it with fresh water, bring it to a boil but do not boil it. Set it where it will cook gently below the boiling point until you are ready to use it. Cook each of the vegetables separately. If they are very young and small, allow several of each
