Fish and fried fish are almost synonymous in the south. A favourite way of frying them is to coat small fish or fillets of larger fish, e.g. weakfish, in cornmeal and deep-fry or pan-fry them thus. The contrast between the crispness of the coating and the succulence of the fish inside is most agreeable. You need 1 kg (2 lb) of cleaned fish and ½–1 cup of cornmeal for 6 people.
